Jamaican carrot juice is a Caribbean classic that can be made with a juicer or with a blender if you do not have one available to you.  This can also be made into a delicious “adult” beverage by adding some rum to the final creation.

Here are the ingredients if using a juicer:

2 lbs of carrots
12 oz sweetened condensed milk (can substitute for coconut milk)
1 tbsp vanilla extract
¼ tsp nutmeg
Jamaican rum (optional)

Directions:

Clean and cut off the carrot greens and process through the juicer. Add the condensed milk or coconut milk to the finished juice. Depending on how much juice your carrots produced you can add the milk to taste. Try not to overpower the juice with the milk so you still get the natural carrot juice as the main flavor profile. Add in the vanilla extract and stir all together. Finish the juice with a dusting of the nutmeg on top of the juice and enjoy!

Feel free to add some ice cubes and add a splash of Rum if are looking to make this into a Jamaican nightcap.

Here are the ingredients if using a blender:

2 lbs of carrots
4 to 5 cups of cold water
12 oz sweetened condensed milk ( can substitute for coconut milk)
1 tbsp vanilla extract
¼ tsp nutmeg
Jamaican rum (optional)

Directions:

Clean and cut off the carrot greens, and cut the carrots into smaller chunks for easier blending. Add the carrots and the water into the blender and process. Use a cheesecloth or fine mesh to separate the carrot pulp from the juice.  Add the milk, vanilla and dust with nutmeg.

Again, add the ice cubes and rum to create an adult version of this Jamaican classic juice.
