I’m crazy for kale not only because of how nutrient dense it is, but also because I just feel great after adding it to my favorite recipes. I’m going a little Kale Krazy in this recipe so bear with me. As you probably know there are many varieties and colors of Kale, each which has slightly different nutrient profiles. Different nutrients are associated with the various colors so this is a fun way to get a little Krazy with your Kale.

I try to find the darkest deep green kale, red kale and then whatever other color I can find. At my local health food store there is often purple kale. You might have to go to a health food store to find more than just the typical green kale at most supermarkets. To mellow out the bitterness of the kale I add cucumber, apple, carrot and lemon.

Ingredients:

2 large leafs of green kale
2 large leafs of red kale
2 large leafs of purple kale
1 cucumber
1 apple
3 carrots
1/4 lemon
Directions:

Wash and process the ingredients as you typically would and for what works best in your particular juicer. Add the kale first to allow the more water dense cucumber and apple push through the kale juice. Peel the lemon and add just few slices through the juicer.
