TRIVIA ANSWERS LISTED BELOW:

1. Kale contains sulforaphane, a chemical with high anti-cancer properties. Which cooking process decreases the level of sulforaphane in Kale?
Answer: Boiling decreases the level of sulforaphane in Kale so we highly recommend you eat it plain. Here is a hint: Kale freezes very well and tastes sweeter after being exposed to a frost… keep it cold and fresh!

2. Kale is also called Borecole. Where did this name most likely originate?
Answer: The name Borecole most likely originates from the Dutch.

3. Continuing our Vitamin C competition from last week: Which has more Vitamin C, 100 grams of Lemon Juice or 100 grams of Kale?
Kale beats the lemon hands down! Kale has approximately 120mg of Vitamin C while lemon juice has approximately 39mg per 100 grams. For reference 1.5 cups of chopped kale is approximately 100 grams and 2 lemons yields around 96 grams of juice. The moral of this story is… eat your Kale (and drink your lemon juice)!
